What's the difference between the 3900X and 3900XT?

The 3900XT is a refined Zen 2 refresh with a slightly higher 4.7 GHz boost versus 4.6 GHz on the 3900X. The performance difference is small in practice. Both are now Zen 2 second-hand options.

Does the 3900XT include a cooler?

No. A decent aftermarket tower cooler or 240mm AIO is needed for the 105W TDP, especially under sustained all-core load.
