Does the Hisense 75U6NQTUK do 4K 120Hz?

No. The panel is 60Hz, so although the HDMI ports are 2.1 compliant for VRR and ALLM, it cannot run 4K at 120Hz. For that you need a 144Hz set.

How many dimming zones does it have?

It has 240 Mini-LED local dimming zones. That gives good contrast, though spread across 75 inches each zone covers a fairly large area.

Is 75 inches too big for my room?
